Will Clarke's Decadent Brownie is an Indulgent Delight

When performing on the road music producers and DJs don’t always get to eat as healthy as they’d like. As a result, many have unsurprisingly taken to makeshift meals they can prep on a simple hotplate or cook over a campfire. Self-care just so rarely can be found in the drive-thru. Despite the mental and physical costs, the show must go on, so to learn more about what the most iconic DJs eat to keep the party going we’ve collected their most impressive recipes in a new series called Turnip The Beets.
In our first-ever installment, we’re heading into the kitchen with Will Clarke. Known on Instagram secondly as @willmakesyouhungry he’s true to his handle. More to the point, Will Clarke cooks up and serves some of the most mouthwatering bliss a person can throw over one lip. He’s a busy man too. As a lifelong foodie and an avid home cook, Clarke is a man who makes the most of every moment. Nevertheless, we caught up with him to get one of his favorite recipes.
His choice? A rich and succulent Chocolate Brownie.
“I’ve never been one to order a dessert.” Says Clarke of his dish. “I’d personally rather just finish with a bar of chocolate and that will do me good. However I was cooking for my friends as a farewell and celebration of me going back to touring so I thought I should probably make a dessert. I wanted something that was super easy and even if I fucked it up it would still taste good. So I came across a brownie, I modified the recipe a little bit to make it richer, more falvoursum (even if thats a word). Will Clarke’s Chocolate Brownie
Ingredients (to convert from metric to standard click here)
150g Unsalted Butter
300g Dark Chocolate (70%)
50g Cocoa Powder
200g Wholemeal Rye Flour
Half teaspoon Baking Powder
1 teaspoon of Fine Sea Salt
200g Golden Caster Sugar
200g Soft Light Brown Sugar
4 Free Range Eggs
1 Tablespoon Vanilla Extract
Instructions:
Step One: Turn Oven to 180 Degrees Celsius.
Step Two: Melt butter and chocolate in a bowl.
Step Three: Add cocoa powder, rye flour, fine sea salt, and baking powder into the bowl.
Step Four: Crack the eggs into a bowl and add the caster sugar, soft brown sugar, and vanilla.
Step Five: Whisk the egg mixture until it’s light and fluffy. (This will take around 5 minutes).
Step Six: Slowly pour and whisk the melted chocolate into the egg mix until mixed.
Step Seven: Add flour mixture and pour it into a tin or baking pan.
Step Eight: Sprinkle sea salt flakes across the top.
Step Nine: Bake for 20-25 minutes (you want it to be gooey inside)
Step Ten: Let it cool in the tin or baking pan for 10-20mins. Then serve with a lump of vanilla ice cream.
